An annual evaluation is a program that examines front-of-house and back-of-house operations annually or bi-annually and takes place over 2-3 weeks through use of an intrusive evaluation format (managers and employees are aware of the evaluators presence). Evaluators spend 8-12 hours a day evaluating all facets of the business, including employees, product quality, service levels, management, cleanliness, waste, etc. Evaluators monitor key performance indicators to determine and log customer service levels. Daily performance is relayed to management directly at the end of each day so any problems may be addressed quickly; however the main evaluation goal is to gain an overall picture of business performance and to increase efficiency from year to year. A variety of standard evaluation techniques are used multiple times then averaged to paint a picture of performance in an annual evaluation. For example, during the annual evaluation a mystery shopper will visit 4-5 times and an average score will be formed. That average will then make-up a percentage of the overall performance score.
